Jose Bonilla, PhD

Jose Bonilla has a Ph.D. in Food Science from Purdue University and is a postdoctoral scientist at The University of Southern Denmark. He is focused on the study structure-function relationships of different food macromolecules in food materials, more specifically using advanced microscopy and textural/rheological techniques using a multi-scale approach (molecular, micro, macro). Jose is using super resolution microscopy combined to imaging computational software to look at protein aggregates in food matrices. This comes advance the understanding of food materials, which is much needed to respond to current global food challenges.
