Dr. Harbourne is a Lecturer in Food Science in UCD School of Agriculture and Food Science and a Principal Investigator in UCD Institute of Food and Health. Her research aims to understand the impact of processing and storage on bioactive compounds in foods, with a view to producing sustainable food products with improved health benefits while maintaining or improving overall product quality.
